The Cook Stove / CAKES, COOKIES & BARS




Chocolate cake is a favorite for any season. This one is so easy to mix you will use it for all your family gatherings. I always make it for the family reunion. My family has voted this cake as the best and easiest to bake at home or in the RV. Space in the RV kitchen is usually small, and you don't always have a mixer and all the bowls at your fingertips to mix a cake. If you don't have these ingredients packed in your RV, you might even mix the dry ingredients together before leaving home.

Cowboy Cake

2 ½ cups flour
1 ½ cups sugar
1/2 cup cocoa
2 tsp. soda
1/2 tsp. salt
2/3 cup cooking oil
2 Tbsp. vinegar
1 Tbsp. vanilla
2 cups cold coffee or cold water
1/4 cup sugar
1/2 tsp. cinnamon


Put flour, sugar, cocoa, soda, and salt into an ungreased 9x13x2 inch metal baking pan. Stir with a fork to mix. Form 3 wells in flour mixture. Pour oil into one well, vinegar in one, and vanilla in the other. Pour cold coffee or water over all ingredients and stir with fork until well mixed. Do not beat. Combine remaining sugar and cinnamon: sprinkle over batter. Bake in 350ºF. oven for 35 to 40 minutes. The old cowboys use to bake this cake in a big iron skillet over the campfire. Sounds good doesn't it!
