CHOCOLATE


Chocolate Fudge



Chocolate Divinity Fudge


2 cups of sugar
¼ teaspoon of salt
2/3 cup of light corn syrup
1/3 cup of water
2 egg whites, stiffly beaten
1 teaspoon of vanilla
2 oz. of baking chocolate

Rub a platter with butter
Melt the chocolate in a double boiler
Put the sugar, salt, corn syrup and water into a sauce pan
Cook over low heat, stirring until the mixture comes to a boil
Using a candy thermometer, continue to cook, wiping away crystals from the side of the
pan with a damp cloth, (use a utensil to hold the cloth to keep from burning yourself)
When the thermometer reaches 265 degrees, or when several drops of
syrup form a hard ball in cold water, remove the pan from the heat
Pour the fudge slowly over the egg whites in a bowl, beating constantly
until the candy is cool enough to hold its shape when a bit is dropped
from a teaspoon
Stir in the vanilla and the melted chocolate
Pour the candy onto the platter
Cut into squares
