Chicken Gumbo
For a heartier soup, add canned corn
or 1 cup of cooked rice or both.
Put in a saucepan
¼ cup butter
1 onion, finely chopped
Cook and stir 5 minutes. Add
1 quart chicken stock or broth
½ green pepper, finely chopped
1 cup cooked or canned okra
2 teaspoons salt
¼ teaspoon pepper
1 or 2 cups canned tomatoes

Bring to the boiling point and simmer 40 minutes. If you like, add diced cooked chicken.
