Chocolate Banana Breakfast Loaf
This Chocolate Banana Bread combines the sweet flavor of ripe bananas with chocolate. A perfect accompaniment to that first cup of morning coffee.
1 ½ cups sifted all-purpose flour
½ cup cocoa
2/3 cup sugar
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
½ cup shortening
1 cup mashed ripe bananas
(about 2 medium)
2 eggs, slightly beaten
Apple Nut Bread
Every year when the apples are ready for picking, my husband says, "How about making a loaf of that apple bread?"
This recipe works best if you use pecans!
½ cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1 cup grated peeled apple
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons buttermilk
½ teaspoon vanilla extract
1 cup chopped nuts
¾ teaspoon ground cinnamon
Chocolate Zucchini Bread
A moist scrumptious bread with chocolate and spices that even the kids will love. It's a great way to use up all of those extra zucchinis in your garden!
3 cups all-purpose flour
3 cups sugar
½ cup baking cocoa
1½ teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
¼ teaspoon ground cinnamon
4 eggs
1½ cups vegetable oil
2 tablespoons butter, melted
1½ teaspoons vanilla extract
1½ teaspoons almond extract
3 cups grated zucchini
1 cup chopped pecans
½ cup raisins
Raisin Banana Bread
A great quick bread that is not like your ordinary "dessert" banana bread - it's not overly sweet and the texture is moist yet sturdy enough to slice and make sandwiches!3 cups all-purpose flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pumpkin pie spice
½ teaspoon baking soda
½ teaspoon ground cinnamon
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup grated zucchini
1 cup grated carrot
½ cup mashed ripe banana
½ cup raisins
½ cup chopped walnuts
Corn Bread
Sour cream gives a distinctive moistness and tenderness to this corn bread. Quick and easy cornbread is extra moist with the addition of sour cream to the batter. Serve alongside chili, beans, sandwiches, and more!
¾ cup yellow cornmeal
1 cup flour
¼ cup sugar
2 tsps, baking powder
½ tsp. Salt
1 cup dairy sour cream
¼ cup milk
1 egg, beaten
2 tsps. Shortening, melted
Mix all ingredients just enough to blend. Pour into greased 8” square pan.
Bake in 425 degree oven for about 20 minutes.
