Prairie chicken was abundant in America's Heartland and made a great soup or stew, especially when mixed with fresh spring or winter vegetables.
Prairie Chicken Stew
3 large, 6-8 oz. boneless, skinless chicken breasts, cut into 1 in" cubes
3 big spuds, scrubbed well, cut into 2" cubes, skin and all
2 med. brown onions, diced
3 or 4 individual stalks celery cubed
several carrots in slices 1/2"
Also, you can add rutabagas, and/or turnips, cut same as carrots
1 can chicken broth
salt and pepper to taste

The full prairie breakfast is a traditional meal which consists of bacon, eggs, and baked beans. A great way to start the day!

2 lbs. bacon, thick sliced
1 big can pork and beans
1 lg. brown onion, diced
1 lg. bell pepper (minus seeds) diced
Get your fire going well, then let it die down some, but is still lively. In a 12” or 15” cast iron skillet, cook the bacon till it is crisp, no limp fat. Drain and set aside.

This is a variation of a Hungarian chicken dish.
Large frying pan w/lid.
Cut up chicken (or use package thighs and breasts).
FIRST: Dry blend 3 tbs paprika, ½ tsp salt, ½ tsp black pepper.
Break skin from chicken (but leave on to re-cover bird) and rub mix on. Replace skin. Let set few minutes.
